Padrino

This Ft Thomas spin-off of the “OG” @padrinoitalian in Milford specializes in thin crust pizza. I like the subtle Godfather reference, ‘Il Padrino’ being Italian for ‘The Godfather’ (a 10/10 film). I’ve been to many below average restaurants with just straight up movie names like “Godfather’s Pizza”, “My Cousin Vinny’s”, or “La Dolce Vita”, so I viewed the relative subtly as a good sign. To my taste, this oregano-forward pie was somewhat flawed but flawed in interesting ways that I thought still worth discussing. The first thing that stood out to me was the cheese - Padrino’s uses a peculiar blend that is more crumbly than the typical stretchy mozzarella. I’d guess it includes a lot of parmesan, jack cheese, and perhaps even a bit of subtle cheddar (given the color). It wasn’t bad, but was kinda odd. When you bite into a slice, the cheese would break apart, rather than stretch. My other main observation is that the thin crust was rather dense - as if it were rolled flat. My ideal New York style is thin & chewy with a crisp outer crust & some airy bubbles on the inside. Padrino’s crust was chewy, dense (no air bubbles), and floppy. I include a non-cheese-pull video to demonstrate - the slice is thin yet dense and greasy. So, not a 10/10, but hey - it’s still pizza and at the end of the day a cheesy greasy pie is still pretty good.
