“Brewery Pizza” - isn’t it great? Brewery pizza embodies a distinctly American multicultural synthesis: Italian culinary tradition reinterpreted with extra cheese, German brewing heritage filtered through competitive innovation, all within reclaimed industrial spaces that stage a democratic, multicultural dining ritual. Whodey indeed.
Recently, @madtreebrewing started making their own pizza (replacing the formerly in-house @catchafirepizza, which graduated to its own brick & mortar location). There’s a lot to like about the New York-ish style pizza at Madtree. The slice looks great on the plate - cheesy with crispy-edged pepperoni, and a nicely browned rim - all bathed in the aura of a satisfying grease sheen that brings a classic, indulgent quality. For the large amount of sausage, pepperoni, and cheese it was surprisingly structurally sound. The crust had a solid flavor - you wouldn’t order it for breadsticks, but wouldn’t skip it either. While it had some loft and airiness in the rim (i.e. not too dense) the flavor was mild - pleasant, if perhaps with less depth or fermentation character. With a spring kolsch, it hits the spot.
Overall, *you heard it here first* : Madtree offers a very pleasant brewery pizza experience.
