Killer Queen

The nice folks at @foureg (the brain-trust behind @keystonebar, @igbys, @rosedaleotr, etc) invited us to the grand opening of their new cocktail bar / pizzeria at the Banks yesterday. @killerqueencin’s minimalist menu includes 12” pizzas and “pizza bombs” (essentially garlic knots filled w/ pepperoni and cheese). Theirs is a bar style pizza, with very thin yet crispy crust - such that the slice sticks straight out when held. The cracker-like crust had minimal air bubbles, as if it was flattened thin with a rolling pin. Nonetheless, it was quite flavorful, with a buttery taste and some light charring. As the pizza was a super thin, the butter crust and toppings flavors were dominant. With this type of pizza sogginess is always a risk (is anything more depressing than a soggy bar pie?), but fortunately our pizzas remained appropriately crisp. As a not too carb heavy style, I feel like this is pretty much what you want for a pizza at a cocktail bar (after all, who wants deep dish with their vodka spritzer?). For me, it paired well with their take on an Old Fashioned.
