Cork N’ Crust

New York style pizza from a new restaurant in an old Italianate building in Bellevue (the former Virgil’s). When a restaurant is run by engaged onsite owners who really seem to care, the difference is palpable (as opposed to businesses on autopilot). Here, the owners were great & very thoughtful (also, when they asked me how we heard of them, I said Instagram). @corkncrustbellevue is a sit down restaurant that specializes in wine & pizza. So, the menu lists a suggested wine pairing for each pizza. We opted for a large vegetarian. The thin crust was crisp & chewy on the outside while soft and a bit airy on the inside (the way a NY slice “should be”). It had a dash of cornmeal on the bottom of the crust from the bake. The toppings were plentiful, as was the cheese - reflected by the epically messy #cheesepull by noted local artist @likethesalt. Overall, it was a quality pizza experience and I’d like to visit @corkncrustbellevue again to try more of the pizza menu.
