Bircus

A “Goetta Grip” pizza topped with crumbled Goetta sausage & Grippos BBQ potato chips (the world’s greatest potato chip), available at this brewery+circus+Neapolitan pizza mashup. Bircus’s full circus brewery is located in stately downtown Ludlow, but I visited their secondary shop in Covington which prominently features a wood fired oven. Normally, I’m pretty traditional on toppings, but I made an exception here. The Goetta, Grippos, and cheese were plentiful and dominated the taste (and texture) of the pizza. The crust was a crisp Neapolitan-ish one, if a little denser (and likely baked at a lower temp) than a place like A Tavola. Overall, a fine choice & perhaps “The Best Pizza in Covington”.
