Unregular Pizza

Roman style pizza al taglio (“pizza by the cut”) in Union Square for #PresidentsDay. Baked in a rectangular pan using a high hydration percentage (i.e. a lot of water in the dough recipe), the Roman style square slice is lighter than its Sicilian and American cousins. This masterful example of that Roman style has a crisp exterior but a very soft interior - perhaps resembling a very light focaccia. Even without toppings, it would be some great bread. We enjoyed a variety of slices, all of which were excellent. Furthermore, it’s Baby Lucy approved.
