Prince Street Pizza

My first ever post from this account was a review of Prince Street Pizza’s Hollywood location (I was out in LA for a football game). The original Manhattan shop has long been a favorite of mine - since they took over for the “original” Prince Street Ray’s Pizza. So, when I happened to pass their recently-opened Chicago spot, I felt I had to stop in for a slice.

The question was, does this Chicago outpost of @princestreetpizza live up to the New York original? I’m happy to report that it does. Here, as in the city, Prince Street’s Sicilian square slice is defined by its ultra-crisp, pan-fried crust. It’s greasy, but not soggy, with a strong flavor, and it holds its shape perfectly - standing straight out when held (well, maybe a 10 degree bend). And of course, it’s topped with their signature abundance of cup-and-char pepperoni: spicy, crispy-edged, and pooled with oil. It’s a beautiful mess.

If you’re a fan of the original, you’ll very much enjoy this slice. My only critique? I wouldn’t mind a good dipping sauce: something house-made, like a tangy ranch, could push this even further.
