‘Pizza Quadrata Romana’ which translates to ‘Roman Square Pizza’ is an American outpost by a venerable Italian pizzaiolo. Consequently, this Upper East Side pizzeria specializes in Roman style bakery sheet pizza (Pizza al taglio) - a rare delicacy in America. The Roman style of square slice is lighter than its Sicilian and American cousins. This masterful example of that Roman style (using 80% hydration) has a crisp exterior but a very soft interior - perhaps resembling a very light focaccia. Enjoyed on Second Avenue, (S)PQR’s burrata slice is a favorite and (for this philistine at least) pairs well with some @varietycoffee.
