My Pie Pizzeria Romana

This is a Roman style “pizza al taglio” (pizza by the cut) style slice shop in Midtown. For the most part, Midtown can be a bit of a desert for top tier pizza. But I’m pretty much always down for Roman style pizza and so I was quite happy when I was able to stop by this Lexington Avenue oasis for a Thursday lunch a couple weeks ago. Roman pizzas are traditionally made in a big sheet and they cut (taglio) out a slice for you. Using a high hydration percentage (i.e. a lot of water in the dough recipe), no sugar, but a 48hr slow rise, the Roman style slice is lighter than its Sicilian and American square cugini. My Pie advertises that they use a natural four flour blend for their dough. The resulting slice has a crisp exterior but a very soft interior - reminiscent of a very light focaccia. The bottom was a little more browned and crisp that I usually see in Roman style, but I thought that added some nice texture as well as flavor. Being in the unofficial US capital, I opted for the most American of toppings - pepperoni (a fake Italian word representing true flavor). Perhaps less ‘authentic’ but the Roman pepperoni slice was a delicious example of American culinary multiculturalism - kudos to @mypiepizzeria on an excellent slice and the best I’ve had in this area.
